Lunch - Bruschette con Pomodorini, Merluzzo & Crema di Asparagi or Tomato, Cod and Cream of Asparagus Bruschetta

Avevo in casa del pane avanzato e del merluzzo cotto a vapore che avevo comprato ieri al mercato in città. Qualche asparago da utilizzare al più presto e così ho pensato di trasformare quest ingredienti in un pranzetto leggero e gustosissimo.
Ho lavato gli asparagi, tolto la parte del gambo più fibrosa, li ho poi tagliati a rondelline e li ho messi a cuocere a vapore facendo uno strato con le rondelle dei gambi e mettendo le punte sopra. Nel frattempo ho lavato i pomodorini, li ho tagliati a cubettini piccoli e conditi con olio extravergine di oliva, sale, pepe e origano. Ho sminuzzato il merluzzo e l'ho aggiunto ai pomodori. Ho tagliato il pane a fettine sottili e le ho messe a tostare in una padella antiaderente.
Ho frullato i gambi di asparago con un paio di cucchiai di acqua di cottura e ho salato la crema.
Una volta che il pane si è dorato l'ho insaporito strusciandoci sopra uno spicchio d'aglio, ho messo un cucchiaio di crema di asparagi e versato sopra i pomodorini e merluzzo, ho poi decorato le bruschette con le punte di asparago et voilà!
Il sapore di questa bruschetta nata dal riciclo degli avanzi è decisamente ottimo, non mancherò di riproporle per qualche aperitivo o come antipasto per un pranzo domenicale.

English Version

I had some leftover bread and steamed cod I bought at the weekly market yesterday. Some asparagus to be used as soon as possible and so I thought to turn these ingredients in a light and delicious lunch.
I washed the asparagus, removed the tough part of the stalk, I cut them in small bits and steamed them in layers making sure to put the asparagus tips on top of the stalks. Meanwhile, I washed the tomatoes, I diced them and seasoned with salt, pepper, oregano and extra virgin olive oil. I shredded the cod and added it to the tomatoes, after that I cut the bread into thin slices and toasted them in a pan.
Once the asparagus were ready I made a creamy sauce with the asparagus stalks and a couple of spoonfuls of cooking water and seasoned with salt.
Once the bread was golden I rubbed it with a garlic clove, I put a tablespoon of asparagus sauce on top and finished it off with some cod and tomato mixture then I decorated my bruschetta with the asparagus tips and voila!
The flavour of this bruschetta created to use some leftovers is excellent, I will certainly make it again as an appetizer or as a starter for a Sunday lunch.
